Raspberry Caipirinha with Sweet Lime Espuma

2 oz. Cuca Fresca Premium Cachaça
4 cubes Fresh Lime
4 Fresh Raspberries
2 tsp. Superfine Sugar

Combine the lime, raspberries and sugar in the bottom of a small shaker and muddle together. Fill the shaker to the top with ice and add the cachaca. Shake well and pour into a 10oz. rocks glass. Top with the sweet lime espuma (recipe follows) and garnish with a lime slice.

Sweet Lime Espuma
1 oz Fresh Lime Juice
1 oz Agave Nectar
1 Egg White

Combine all ingredients in a small shaker and shake well for 30 seconds, until espuma reaches a frothy thickness.
